BANANA PECAN PANCAKES (GF + DF)

Yesterday, we all woke up starving and I was beginning to feel shaky because I ate a really early dinner the night before and now it was 10am. So I threw things in a bowl because I didn't want to look for a recipe and I wanted to eat right then. This recipe turned out to be AMAZING! SO happy with how they turned out and they totally taste like banana nut bread so it's basically dessert for breakfast. We served them with scrambled eggs and I wished we had sausage, but then this morning we had the leftovers for breakfast and they were great by themselves!



BANANA PECAN PANCAKES

1 CUP GF ALL PURPOSE FLOUR
1 CUP OAT FLOUR
2 EGGS
1 CUP ORIGINAL UNSWEETENED ALMOND MILK
1/2 CUP RAW HONEY
1-2 TSP GROUND CINNAMON
1 TBSP BAKING POWDER
1 BANANA (MASHED)

You will also need:
CHOPPED PECANS
MAPLE SYRUP

1. Mash banana in a large bowl with a fork. Then stir in the milk, honey, cinnamon and eggs.
2. Add both flours and baking powder.
3. Stir and in the bake your pancakes as usual in a skillet on the stove top! 

To prevent from sticking, use coconut or grapeseed oil generously on your skillet.

Stack your pancakes, drop a handful of chopped pecans on top with maple syrup drizzled over the stack! Enjoy!
